Fricciolose

INGREDIENTS

Eggs, Parmesan, Superfine flour, extra virgin olive oil

METHOD

1.  Whisk 2 eggs and add a little extra virgin olive oil;

2. Add the flour and mix adding water to adjust the consistency;

3. Let the dough rest for 2 hours;

4.  Heat a non-stick hot pan and pour olive oil on the pan with a paper towel to prevent the mixture from sticking during cooking;

5. Pour the mixture irregularly and cook moving the pan, allowing the mixture to adhere over the entire surface;

6.  Turn the fricciolosa and complete the cooking on the other side;

7. Place the cooked fricciolosa on absorbent paper and sprinkle with Parmesan;

8.  Pass the fricciolosa on a plate, roll it up and continue the same procedure with others until the large dish is filled.
