
Codfish in tomato sauce
INGREDIENTS
Garlic, Onion, Potatoes, Cod, Water, Extra Virgin olive Oil, bay leaves, Peeled Tomatoes
METHOD
1. Cut the cod into slices and soak in water for 2 days;
2. . Cut the onion into fine round slices;
3. Clean the garlic and finely chop it;
4. Peel the potatoes and cut them into medium-thin slices;
5. Stir-fry the onions and chopped garlic, 4 bay leaves, being careful not to burn them;
6. Add the peeled tomatoes, salt and pepper as desired;
7. As soon as it starts to boil, add the potatoes and onion slices;
8. After 2 minutes, add the cod and pour a glass of hot water to prevent it from sticking;
9. Cook for 10 minutes and then sprinkle with wild fennel;
10. If the water is easily absorbed, add another glass and cook over low heat for at least 30 minutes over low heat.
